Delicious Homemade Chicken a la King
An old classic, this Chicken ala King Recipe is so delicous. It's a childhood favourite for many people and almost everyone has some happy memory of Chicken a la King the way their mom made it.
It was about the nicest meal they served in our college cafeteria. The sauce was very creamy and thick and they would serve it over a scoop of their very dry rice. Chicken Ala King is popular for catering for large numbers because it can be made in bulk and easily frozen for later use. Now a days you can buy it in a can and a variety of other ready-made options. Somehow I could never bring myself to try them. I love homemade and so My Chicken a la King Recipe is a version of my mom's and I like to serve it with rice. My family tells me it makes great comfort food on a cold night. You could also serve it with pasta and I've heard of people having it on toast and even cornbread. It's also a great way to use left-over chicken.
serves 6Chicken Ala King Recipe Ingredients - 1 Chicken cooked, skinned, deboned and cut into bite size pieces
- 3 tablespoons butter
- 1 onion chopped
- 1 greenpepper, seeded and chopped
- 1 teaspoon crushed garlic
- 250g (10oz) button mushrooms, sliced
- 3 tablespoons flour
- ¾ cup chickenstock
- 1 cup (10fl oz) milk
- salt and pepper
- 1 teaspoon ground nutmeg
- 1 tablespoon dry sherry
How To cook Chicken A la King Melt the butter and saute onion, greenpeppers and garlic. Add mushrooms and fry until tender. Stir in the flour to form a roux/paste and add the chicken stock and milk and bring to the boil. Keep stirring until sauce thickens. Add the cooked chicken and seasoning and sherry. Heat through before serving. Chicken a la king can be served with mashed potatoes, pasta or rice. My vegetable suggestion is baby peas because I think they go well with chicken and rice dishes.
