Don't be governed by boring old lettuce and wedges of tomato! Spice it up a little - here I've included a bit of curry powder to for extra flavour. The ingredients say dried herbs but fresh herbs are well worth the effort for this Chicken Pasta Salad Recipe if you can get them.



Serves 6

Chicken Pasta Salad Ingredients

  • 4 filleted chicken breasts
  • 1 tablespoon oil
  • 20 g (¾ oz) butter
  • 1 large onion chopped
  • pinch of sugar
  • 1½ cup of penne pasta cooked
  • ½ cup of sliced button mushrooms
  • 1 cup chopped cucumber
  • 2 chopped tomatoes
  • 1 cup shredded lettuce leaves
  • 1 carrot chopped into thin strips
  • 1 avocado cubed (optional)
  • 3 hard boiled eggs (optional)
  • ½ cup (125 g/4 oz) mayonnaise
  • 1 teaspoon mild curry powder
  • 2 teaspoons lemon juice
  • ½ cup plain yoghurt or sour cream
  • 1 teaspoon sugar
  • 1 teaspoon dried mixed herbs

Cooking Instructions

Heat the oil and butter in a frying pan, add the chickenand cook for about 8 minutes on each side or until brownedand cooked through. Remove from the pan and set aside to cool.Then cut into slices.

In the same pan, fry the onion until it turns golden brown.Caramelise the onion by adding the pinch of sugar and cook quickly over a high heat. Then reduce heat and simmer till caramelized.Set this aside.

To make the dressing combine the lemon juice, curry powder,sugar and herbs in a jug. Blend well with a whisk and season with salt and pepper. Add the mayonnaise and sour cream/yoghurt andwhisk again until well blended.

Gently toss the chicken and the other salad ingredients togetherin a bowl and then drizzle with the dressing. If you have the inclination to make croutons, you can sprinkle them over the top of the salad.
