A popular, classic Italian dish, Cacciatore is a meal that is prepared hunter-style with onions, mushrooms, tomatoes, herbs and wine. Using your crock pot will keep it a low fat chicken recipe but it isn't low on taste.
The dark meat is the best meat to use but any cut will do. This recipe suggests chicken breast pieces.

Place the chicken breast pieces in your crockpot and then season.Place the mushrooms on top of the chicken followed by the remaining ingredients. Cook on a low heat setting for 6 - 8 hours until the chickenbreasts are cooked through. To make the recipe more healthy and low fat, remove the skin from each chicken breast before serving. This eliminates a large portion of the fat kilojoules. This Crockpot Chicken Cacciatore recipe is great to serve with Basmati Rice or with spaghetti.

Stovetop Chicken Cacciatore Recipe

  • 1 chicken cut into 12 pieces
  • 1 cup olive oil
  • 1/2 medium onion, chopped
  • 2 cups sliced fresh mushrooms
  • 2/3 cup red wine
  • 5 slices Italian prosciutto, chopped
  • 2 tablespoons butter
  • 2 cups chicken broth
  • 1 tin tomatoes - chopped
  • 1 teaspoon parsley, chopped
  • freshly ground pepper

Chicken Cacciatore Cooking Instructions

  1. Brown chicken in the olive oil in a deep pan.
  2. When chicken is almost cooked, add the onion and cook for another 5 minutes.
  3. Then add the mushrooms and cook for a further 5 minutes.
  4. When cooked, drain the oil from the pan. Now add the red wine, prosciutto and butter to the pan. Cook for about 10 minutes.
  5. Add the chicken broth, tomatoes, parsley and a dash of pepper. Simmer until sauce thickens - about 10 minutes.
